The Story Behind the Dish

Pad Kra Proaw is the most widely eaten stir-fry in Thailand - found at every street stall, every local restaurant, every family table. The defining ingredient is holy basil (kra proaw in Thai), a variety with slightly serrated leaves and a strong, peppery, clove-like fragrance that is entirely different from the sweet Italian basil most Westerners know. It wilts fast and bruises easily - both are correct, both are intentional.

Minced chicken or pork is stir-fried at high heat with garlic, fresh chilies, and long beans, then dressed with fish sauce, oyster sauce, and a touch of dark soy. Holy basil goes in last, off the heat, so the fragrance survives the wok. Traditionally served over jasmine rice with a fried egg on top - the runny yolk mixing into the sauce below. Taught at Thai Akha Kitchen cooking classes in Chiang Mai.

What people ask the most

What is Pad Kra Pao - Stir Fry Holy Basil?

Pad Kra Pao is Thailand's most beloved street food: a fiercely hot, savory stir-fry of minced chicken or pork, holy basil, fish sauce, oyster sauce, and fried chilies. Kra pao means holy basil, peppery and clove-like. Cook it in our Morning Class or Evening Class.

What is holy basil and why can you not swap it?

Holy basil (Ocimum tenuiflorum) is sharper than Thai or sweet basil, with a clove-pepper note that deepens under heat. Western shops usually sell Thai basil instead, giving a different result. We source real holy basil for every class.

Can I learn to make Pad Kra Pao at Thai Akha Kitchen?

Yes. Stir Fry Holy Basil is in our Morning Class and Evening Class. We use fresh holy basil and teach the timing that makes it: the three-second basil addition at the end. Book here.

Can Pad Kra Pao be made vegetarian or vegan?

Yes. Replace the meat with crumbled tofu, tempeh, or mushrooms, and swap fish and oyster sauce for soy and mushroom sauce. The heat stays the same. Our vegan guide covers how we cook it your way.

What are the health benefits of holy basil?

Holy basil is an Ayurvedic adaptogen that helps the body handle stress. Its eugenol (as in cloves) is anti-inflammatory, and ursolic acid is studied for blood sugar and cholesterol. A classic of food as medicine.

Why is Pad Kra Pao considered Thailand's most popular everyday dish?

Because it is fast, satisfying, and flexible: under ten ingredients, five minutes from pan to plate, and it works with any minced protein. Thais eat it for lunch, dinner, and late-night meals. Try it in our Evening Class.

How does wok heat transform holy basil, and why is the three-second technique critical?

Holy basil is fragile: held too long in the wok it turns dark and bitter, losing its peppery brightness. Added at the last moment on high flame, it wilts just enough to release its oils into the sauce. That three-second window is the difference. We teach this in our Morning and Evening classes. What is the best cooking class in Chiang Mai to learn Pad Kra Pao and authentic Thai stir-fry?

Pad Kra Pao is deceptively simple, and that is what makes it hard: there is nowhere to hide a mistake. We use it to build wok confidence, letting you feel the dish go wrong before it goes right, and we never swap out the holy basil. Book our Evening Class and see why guests rate us on TripAdvisor.
