The Story Behind the Dish
The foundational Thai curry paste. Made from sun-dried red Anaheim chilies - soaked, then pounded with galangal, lemongrass, kaffir lime rind, coriander root, garlic, and shrimp paste in a heavy stone mortar. Every ingredient goes in a specific order, from hardest to softest, so the fibers break down correctly. A blender cannot do this - it chops rather than crushes, and the essential oils stay locked inside the cells.
The finished paste is the base for red curry, Panang, and Massaman - three dishes with very different final characters, all built on the same foundation. Made fresh, it keeps for five days in the fridge and improves slightly by the second day as the flavors settle. At Thai Akha Kitchen, making curry paste by hand is one of the first things every Chef learns. Taught at Thai Akha Kitchen cooking classes in Chiang Mai.

What people ask the most
What makes hand-pounded red curry paste better than store-bought?
Hand-pounding crushes fibrous aromatics, lemongrass, galangal, chilies, releasing their essential oils through friction and heat. A blender chops but does not crush, giving a watery, flat paste. Hand-pounded has a depth store-bought cannot match. Cook it in our red curry.
Can I use fresh red chilies instead of dried?
No. Dried red chilies are essential: drying concentrates the flavor, deepens the color to vivid brick red, and gives that smoky warmth. Fresh red chilies make a brighter, rawer paste of a different category. More in our paste guide.
How long does homemade red curry paste keep?
Freshly pounded paste is best within hours. Refrigerate airtight for up to 5 days, or freeze in tablespoon portions for 3 months. In class we always use the paste pounded the same day, where the magic is. See our Evening Class.
Can I make this paste vegan?
Yes. Replace the shrimp paste (kapi) with one teaspoon of white miso or fermented soybean paste. The result is slightly less pungent but still deeply aromatic and complex. See our vegan guide.
What is the difference between red, green, and panang curry paste?
Red uses dried red chilies for heat and deep color; green uses fresh green chilies for brightness; Panang adds roasted peanuts for a thick, velvety richness. Each defines a different curry. Read about Thai curry.
