The apples you see in Chiang Mai markets are almost all imported from China - apple trees never took to Thailand's lowland heat. The fruit started out in Central Asia and travelled the trade routes for thousands of years before reaching Asian and European tables. Crisp and sweet, it isn't a traditional Thai or Akha ingredient, but it's common in local markets now and turns up in fresh fruit plates and the occasional salad.
