Basmati is the long, slender, perfumed rice of South Asia - its name comes from a Sanskrit word for 'fragrant', and it's been a staple across India and Pakistan for several thousand years. The grains stay separate and fluffy when cooked, with a delicate aroma. It isn't the rice of Northern Thailand, where sticky rice rules the table, but the contrast is worth knowing: basmati is dry and fragrant where Thai jasmine is soft and sweet, and sticky rice is chewy and eaten by hand.
