How is Beef used in Thai cooking?

Beef plays a quieter role in Thai cooking than visitors often expect. Across most of the country it's eaten sparingly - there's far more chicken and pork on the table - though the northeast (Isaan) uses more, often from cattle raised for a family's own kitchen. When beef does appear it's usually thinly sliced for quick grilling or stir-fries, or simmered slowly in spiced soups. This helps explain why so many Northern Thai and Akha dishes are built around pork, chicken, herbs, and vegetables rather than red meat.
