How is Bell Peppers used in Thai cooking?

Bell peppers are the sweet, mild members of the pepper family - all colour and crunch, none of the heat. Sliced into stir-fries they add brightness and a clean, juicy snap near the end of cooking. They're a more modern, Western-leaning addition than a traditional Northern Thai staple. We don't keep them sitting in our kitchen; like other delicate vegetables we bring them in fresh when a dish calls for them rather than storing them.
