Bitter melon earns its name honestly - the pale, warty gourd is genuinely bitter, and that's the point. In both the kitchen and traditional medicine it's valued as a cooling food, eaten to help the body cope with the heat. It's usually salted and rinsed, or blanched, to soften the edge before it goes into soups and stir-fries, often paired with egg or pork to balance it. It's an acquired taste, but a clear example of the Akha and Thai idea that food and medicine are the same thing.
