How is Black Sticky Rice used in Thai cooking?

Black sticky rice, also called purple sticky rice, is a wholegrain glutinous rice - the same family as the white sticky rice eaten across the North, just unmilled. Raw, the grains look almost black; steamed, they bloom into a deep purple and turn chewy and glossy. The flavour is mildly sweet with a nutty, almost fruity edge, which is why it's most often used for dessert - simmered with coconut milk and a little sugar into a warm pudding. It needs a long soak before cooking so the grains soften all the way through.
