In Thai cooking they're best known in som tam (papaya salad), where they're lightly bruised in the mortar so their juice loosens the dressing. Akha cooks reach for a range of tomatoes - wild, cherry, and ordinary garden - depending on what the season offers. We like the cherry type for its firm skin and burst of acidity, which cuts through chili and fish sauce and pulls a salad together.
