Chicken is the everyday meat of Thailand - affordable, available everywhere, and cooked in more ways than almost any other ingredient. Nearly every part of the bird gets used, from breast and thigh down to feet and offal, grilled, fried, stir-fried, or simmered into soup. In Northern Thai and Akha kitchens it's the default protein behind countless dishes, taking on the flavour of whatever paste, herb, or sauce it meets. Its mildness is exactly why it's so useful: it carries bold flavours without competing with them.
