How is Chili Powder used in Thai cooking?

Chili powder is dried red chilies ground to a fine, fiery dust, sometimes blended with other spices. It's one of the workhorses of the Thai kitchen - stirred into som tam, sprinkled over grilled meat, pounded into dips, used wherever a dish needs heat without the fresh chili's moisture. Toasting the chilies before grinding deepens the flavour and adds a smoky edge. We keep it close at hand and add to taste, since a dish can always take more heat but can't easily give it back.
