How is Chives used in Thai cooking?

Garlic chives are a member of the onion family, with flat green stalks and a gentle, sweet oniony flavour milder than onion itself. They're chopped into dishes like Pad Thai, scattered over noodles, or folded into spring rolls and omelettes, adding fresh colour and a soft savoury note. Unlike onion they don't need long cooking - a quick toss through the wok softens them and releases their fragrance. They go in near the end so they keep their green and their lift.
