How is Coconut Oil used in Thai cooking?

Coconut oil is pressed straight from the white flesh of the coconut - a pure plant oil that's solid at room temperature and melts clear once it heats. It brings a faint coconut sweetness to whatever it fries and stands up well to high heat. Because it's entirely plant-based, it suits vegan and Ital (Rastafari) cooking, and we reach for it when a dish should stay free of animal fats. A little goes a long way, carrying the flavour of garlic, chili, and paste into the pan.
