How is Coconut Sugar used in Thai cooking?

Coconut sugar is an unrefined sweetener tapped from the sap of coconut-palm flowers, then boiled down to soft golden crystals. It has a gentle caramel warmth - less sharp than white sugar, earthier and rounder. Because it's entirely plant-based, it works as a substitute for honey in Jain and vegan cooking, sweetening drinks, sauces, and desserts without an animal product. In savoury dishes we use it to round out the salt, sour, and heat that anchor most Northern cooking, adding sweetness that balances rather than dominates.
