How is Cooking Oil used in Thai cooking?

Vegetable oil - nam man peet - is the neutral, everyday frying oil that does the unglamorous but essential work in the kitchen: getting a wok screaming hot, frying curry paste, crisping garlic. It has no strong flavour of its own, which is the point - it carries other flavours rather than adding any. We don't keep it stocked in the working kitchen day to day, but it's in the cookbook as the default cooking fat for home stir-fries and frying.
