Mirin is a sweet Japanese cooking wine used to soften and glaze marinades, adding a mild sweetness and a gentle shine to a dish. It's more a Japanese and fusion ingredient than a Northern Thai staple, so it sits at the edge of the pantry rather than the centre. We don't keep it stocked in the kitchen given its limited use here, but it's worth knowing as the low-alcohol, sweet seasoning behind many teriyaki-style sauces.
