How is Egg Noodle used in Thai cooking?

Egg noodles are the heart of khao soi, the Northern Thai curry-noodle dish Chiang Mai is famous for. Made from egg, rice flour, and a little starch for spring, they're boiled soft and silky, then a portion is often fried crisp and piled on top for contrast. Golden and tender, they soak up the rich coconut curry broth around them. In our kitchen they're the base of one of the dishes guests most want to learn - soft noodles below, crunchy ones above.
