How is Fried Tofu used in Thai cooking?

Fried tofu puffs are squares or triangles of tofu deep-fried until the outside is golden and chewy and the inside turns airy, full of little pockets. Those pockets are the point: they soak up broth and sauce like a sponge, so the tofu carries flavour rather than just sitting in it. They go into soups, curries, and stir-fries, and they're a favourite way to give a vegetarian or vegan dish real substance and bite. We add them to soups near the end so they stay plump.
