Its sharp, vitamin-C-rich juice brings the sour note that balances salt, sweet, and heat in nearly every dish - the squeeze that wakes up a soup, a salad, or a dipping sauce. Thai limes are small and green, more fragrant than the larger Western kind. We add the juice at the end, off the heat, since cooking dulls its bright, fresh acidity.
