Unlike the fierier Thai curry pastes, it leans on warm spices - cinnamon, cardamom, clove, cumin - alongside the usual chili, shallot, garlic, and lemongrass. The result is gentle and aromatic rather than hot, ideal slow-cooked with potato, peanut, and tender meat. We fry the paste in cracked coconut cream first to bloom all those spices before the curry comes together.
