How is Mushroom used in Thai cooking?

Mushrooms - het - are sometimes called the meat of the vegetable world, and Thai cooking uses them hard for exactly that reason: their savoury depth and satisfying texture. From the straw and oyster mushrooms in tom kha gai to the meaty types that anchor vegetarian dishes, they bring body and umami without any meat at all. They're also nourishing - a source of vitamin D, low in calories. We add the softer kinds late so they keep their shape, and let the meatier ones take a real sear for flavour.
