Nutmeg - the seed of an evergreen tree native to Indonesia - brings a warm, sweet, slightly nutty flavour with an earthy edge. Sold ground or as whole seeds you grate fresh, it turns up across Thai cooking in desserts, drinks, curries, and savoury dishes alike, often beside cinnamon and clove in warm spice blends. A little goes a long way; too much turns sharp. We grate it fresh where we can, since the aroma fades fast once it's ground.
