Pineapple - sapparot - is a tropical fruit whose name comes from the Spanish piña, for pinecone, which its rough, segmented skin resembles. In Thailand it's not just a fruit to eat fresh; its bright sweet-and-sour juiciness is cooked into savoury dishes too, from pineapple fried rice to sweet-sour stir-fries and certain curries. That balance of sugar and acid is exactly what Thai cooking loves to play with. We use it both ripe and just-underripe, depending on whether we want more sweetness or more tang.
