How is Sesame Oil used in Thai cooking?

Sesame oil - nam man nga - is a deeply aromatic oil pressed from sesame seeds, with a warm, toasty, nutty fragrance. A few drops go a long way; it's used as a finishing seasoning more than a cooking fat, stirred in at the end so its scent isn't lost to the heat. It leans more Chinese and fusion than traditional Northern Thai, so we don't keep it in the working kitchen, but it's there in the cookbook for the dishes that call for that toasted-sesame depth.
