How is Tamari used in Thai cooking?

Tamari is a premium, gluten-free style of soy sauce - typically brewed with little or no wheat - with a smooth, rich, deeply savoury flavour. It's our recommended substitute for ordinary soy sauce in home cooking when someone needs to avoid gluten, giving the same umami depth safely. We don't keep it in the working kitchen given its limited day-to-day use, but it's the one to reach for at home. A little brings clean salt and roundness to stir-fries, dressings, and dips.
