How is Thai Eggplant used in Thai cooking?

Thai eggplant - ma kheua proh - is the small, round, golfball-sized eggplant, striped green and white, that's a real favourite in Thai kitchens. Cut one open and the firm, crunchy, seedy flesh looks a little like a fig; the flavour is mild with a faint bitterness. It's quartered raw into a plate of vegetables for dipping, or simmered whole into green and red curries, where it stays crunchy and soaks up the sauce. We slice it just before cooking and drop it in water, since the cut flesh browns quickly.
