Technically a fruit, it earns its place as a vegetable here: lightly bruised into som tam, simmered into sauces and stir-fries, or stewed with pork. Its sweet-tart juiciness adds body and a gentle acidity that balances chili and fish sauce. Thai and Akha cooks use everything from wild and cherry tomatoes to the ordinary garden kind.
