How is White Pepper used in Thai cooking?

White pepper - prik thai khao - is the ripe peppercorn with its dark skin removed, leaving a pale, earthy, gently hot spice that's mellower and more rounded than black pepper, without the dark specks. In Thai cooking it's the pepper of choice for soups and marinades and for that warm background heat in many dishes. It's also a core warming spice in Jain variations, where it brings gentle heat to cooking that leaves out onion and garlic. We grind it fresh, since its aroma fades quickly once powdered.
